Flavors of Provence
at Mas de Cornud
Saint Rémy-de-Provence, France
Join eminent kitchen designer Elizabeth Spengler for this enticing small group excursion to southern France for an immersion into the local cuisine at the Seasons of Provence Cooking School while visiting markets and delightful towns and villages. Classes and recipes are in English and all levels of cooking experience are welcome. Just bring your enthusiasm and comfortable clothes, the cost covers everything except airfare to and from Paris and the high speed train (TGV) from CDG airport or Gare de Lyon in central Paris to Avignon TGV station.

The itinerary we have arranged for you in Provence is as follows:

SATURDAY, SEPTEMBER 18
Rendezvous mid-afternoon at Avignon TGV station from where you will transfer by minivan to Mas de Cornud, a beautifully restored 18th century Provençal stone farmhouse, complete with pool, Jacuzzi and indoor and outdoor professional teaching kitchens. Orientation walk in Saint Rémy where Nostradamus was born in 1503. Aperitifs and dinner with your hosts, the Carpitas. Nitockrees (“Nito”) has dual nationality, France and Egypt. David is a well travelled American with a passion for wine and the life and art of Vincent Van Gogh.

SUNDAY, SEPTEMBER 19
Depart for the delightful weekly market at Isle-sur-la Sorgue, the “Venice of Provence” because of its many canals with waterwheels still working away. Besides the food market, you will have a chance to visit the many galleries with antiques and bric a brac as well as the flea market on the street. After a casual lunch, we return to Mas de Cornud for an afternoon cooking class and dinner.

MONDAY, SEPTEMBER 20
The day starts with a pastry class, from savory to sweet. Light lunch. Visit to the asylum in Saint Rémy where Vincent Van Gogh spent a year and painted many of his best works ending in the town center where we visit epicurean specialty stores. Aperitifs and dinner at Mas de Cornud.

TUESDAY, SEPTEMBER 21
Early departure to be on hand for the milking session at a goat farm. We follow the farmers from the milking shed to their immaculate
fromagerie where we observe the cheese making process and learn about affinage, Visit to an organic olive oil mill. Pool side lunch and then an afternoon cooking class using the outdoor kitchen, followed by dinner.

WEDNESDAY, SEPTEMBER 22
We accompany Nito to Saint Rémy, where you will shop with her and then have free time in this wonderful farmer’s market with its stalls of colorful spices, vegetables, fruits, soaps, fabrics and handicrafts. After a market basket lunch and siesta, we gather in the well appointed teaching kitchen for a hands-on cooking class. Before enjoying the fruits of our labor, David will plunge us further into
“la vie Provençale” with a game of pétanque on the bouledrome while we sip pastis and glasses of rosé.

THURSDAY, SEPTEMBER 23
We ascend a winding road to the fabled castle of Les Baux, a “must see” village steeped in the history of the feudal era of Provence. Wine tasting and casual lunch . In the afternoon we will have a cooking class followed by aperitifs and our farewell dinner.

FRIDAY, SEPTEMBER 24
Breakfast and transfer to theAvignon TGV station for your departure.
